  • 1 cup of long grain Basmati rice,
  • 2 tablespoons of vegetable oil,
  • 1 teaspoon of cumin seeds,
  • 1 teaspoon of minced garlic,
  • 1/4 teaspoon of turmeric powder, 1/4 teaspoon of ground cardamom,
  • 1/4 teaspoon of ground coriander,
  • 1/4 teaspoon of ground cinnamon, 1/4 teaspoon of ground cloves,
  • 1/4 teaspoon of ground nutmeg,
  • 1/4 teaspoon of ground mace,
  • 1/4 teaspoon of ground black pepper,
  • 1 cup of diced onion,
  • 1 cup of diced carrots,
  • 1 cup of diced potatoes,
  • 1/2 cup of frozen peas,
  • 1/2 cup of raisins,
  • 2 cups of chicken or vegetable broth, and salt to taste.
  • Rinse the Basmati rice in a sieve and set aside.2. Heat the oil in a large saucepan over medium heat. Add the cumin seeds and garlic and sauté until the garlic is lightly browned.3. Add the turmeric, cardamom, coriander, cinnamon, cloves, nutmeg, mace, and black pepper. Stir to combine.4. Add the onion, carrots, potatoes, and frozen peas. Sauté for about 5 minutes until the vegetables are lightly browned.5. Add the Basmati rice and raisins. Sauté for 2 minutes.6. Add the chicken or vegetable broth and bring to a boil.
